Honey Glazed Pearl Onions

Ingredients
- 3 tablespoons olive oil
- 24 pearl onions, peeled (use cipollini or other small onion)
- 2 cups beef broth (or braising liquid from short ribs)
- 2 tablespoons honey
- salt & freshly ground black pepper
Recipe
- 1 heat olive oil in a skillet over medium heat. once hot, add onions and cook until they begin to brown in spots, stirring occasionally.
- 2 add beef broth or reserved braising liquid and cook until nearly evaporated, about 20 minutes. stir in honey and cook 3 minutes longer, spooning the glaze over onions. season with salt and pepper.
