Ingredients

- 2 tablespoons olive oil
- 1 cup fresh mushrooms, thinly sliced
- 1 medium zucchini, thinly sliced
- 1 small red onion, thinly sliced into rings
- 1/4 teaspoon dried oregano
- 1/4 teaspoon marjoram
- 1/2 teaspoon dried basil
- 1/8 teaspoon dried sage
- 1 teaspoon garlic, chopped
- 2 medium tomatoes, cut into about 10 wedges each
- 1 cup mozzarella cheese, grated (i use low fat cheese)
- salt and pepper (optional)
Recipe
- 1 in a large skillet, heat oil over medium heat. add mushrooms, zucchini, onion, spices and garlic.
- 2 stir occasionally for about 5 minutes. season with salt and pepper now if you're going to.
- 3 add tomatoes, and sprinkle with grated cheese. cover skillet with a lid and continue cooking on low heat until cheese is melted, (about 4 minutes.).
