Green Rice With Cilantro

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 tablespoons olive oil
  • 1 onion, peeled and diced
  • 1 garlic clove, minced
  • 1 cup basmati rice
  • 2 cups chicken broth
  • 1 bay leaf
  • salt
  • 1/2 cup cilantro, chopped

Recipe

  • 1 in a small pot, over medium-high heat, sauté the onions and garlic in the olive oil.
  • 2 stir until they soften, then add the rice.
  • 3 stir to coat it well with the oil.
  • 4 add broth, bay leaf and season with salt.
  • 5 bring to a simmer, stir and then cover with a tight fitting lid.
  • 6 turn the heat to low.
  • 7 let simmer until all the water has been absorbed, about 15 minutes.
  • 8 fluff rice with fork and stir in cilantro.
