Green Beans In Olive Oil

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • 1 lb green beans, trimmed, washed, drained, and cut into thirds
  • 1 medium onion, chopped
  • 2 tomatoes, chopped
  • 1 teaspoon salt
  • 1/3 cup extra virgin olive oil
  • 3 1/2 teaspoons sugar
  • 1/2 cup water (or more)

Recipe

  • 1 place onions and tomatoes in a saucepan. sprinkle with salt and stir gently. add green beans, olive oil and sugar; stir. cover and cook over medium low heat, stirring occasionally, for about 15 minutes until beans are softened. once the liquid has been absorbed, stir fry a couple of minutes. add 1/2 cup water, cover, and simmer 40 minutes until beans are tender. the beans will be moist, but not watery.
  • 2 serve cold or room temperature.
