Grilled-pineapple Rice

Total Time: 50 mins Preparation Time: 25 mins Cook Time: 25 mins

Ingredients

  • Servings: 8
  • 1 tablespoon dark brown sugar
  • 1/2 teaspoon ground chipotle chile pepper
  • 1/4 teaspoon salt
  • 1 pineapple, cored, cut into 1/2 inch-thick slices
  • 2 tablespoons toasted sesame oil
  • 3 scallions, sliced
  • 1 garlic clove, minced
  • 4 cups cooked rice, preferably basmati
  • 1/2 teaspoon salt

Recipe

  • 1 prepare grill for direct-heat cooking.
  • 2 combine sugar, chile pepper and salt; sprinkle over both sides of pineapple slices.
  • 3 grill, turning once, until browned, 3 minutes per side. cool slightly; cut into chunks.
  • 4 in large nonstick skillet heat oil over medium heat; add scallions.
  • 5 cook, stirring, until golden, 3 minutes.
  • 6 stir in garlic; cook 1 minute. add rice, salt and pineapple; cook, stirring, until heated.
