Holiday Whipped Sweet Potatoes

Ingredients

- 3 lbs sweet potatoes or 3 lbs yams
- 2 eggs
- 1/4 cup brown sugar
- 1/4 cup melted butter
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 2 tablespoons orange juice
- 1 cup chopped pecans
- 2/3 cup brown sugar
- 1/4 cup melted butter
Recipe
- 1 peel and cut sweet potatoes into small pieces. boil until soft and mash and whip until smooth.
- 2 in a separate bowl, combine eggs, 1/4 c brown sugar, 1/4 c butter, salt, cinnamon and orange juice. if mixture seems a little too thick, add a few drops of water for smoothness.
- 3 add egg mixture to sweet potatoes and mix until smooth.
- 4 spread into a greased rectangular baking dish (11x17).
- 5 top with pecans, then brown sugar, then drizzle with melted butter.
- 6 bake uncovered at 375 for 20 minutes. watch closely as it will burn easily.
