Holiday Whipped Sweet Potatoes

Total Time: 50 mins Preparation Time: 30 mins Cook Time: 20 mins

Ingredients

  • Servings: 8
  • 3 lbs sweet potatoes or 3 lbs yams
  • 2 eggs
  • 1/4 cup brown sugar
  • 1/4 cup melted butter
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 tablespoons orange juice
  • 1 cup chopped pecans
  • 2/3 cup brown sugar
  • 1/4 cup melted butter

Recipe

  • 1 peel and cut sweet potatoes into small pieces. boil until soft and mash and whip until smooth.
  • 2 in a separate bowl, combine eggs, 1/4 c brown sugar, 1/4 c butter, salt, cinnamon and orange juice. if mixture seems a little too thick, add a few drops of water for smoothness.
  • 3 add egg mixture to sweet potatoes and mix until smooth.
  • 4 spread into a greased rectangular baking dish (11x17).
  • 5 top with pecans, then brown sugar, then drizzle with melted butter.
  • 6 bake uncovered at 375 for 20 minutes. watch closely as it will burn easily.
