Grilled Zucchini Roll-ups

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 3 small zucchini, cut lengthwise into 1/4 inch thick slices
  • 1 tablespoon olive oil
  • 1/8 teaspoon salt
  • 1 pinch ground pepper
  • 1 1/2 ounces goat cheese
  • 1 tablespoon minced fresh parsley (i've used dried and it is just as good)
  • 1/2 teaspoon lemon juice
  • 2 ounces baby spinach leaves (about 2 cups)
  • 1/3 cup fresh basil leaf

Recipe

  • 1 discard outermost zucchini pieces.
  • 2 brush zucchini with olive oil on both sides. sprinkle with salt and pepper.
  • 3 grill until tender (about 4 minutes).
  • 4 in a small bowl, combine goat cheese, parsely, and lemon juice.
  • 5 put 1/2 teaspoon of the cheese mixture about 1/2 inch from the end of a zucchini slice.
  • 6 top with a few spinach leaves and one small (or half a large) basil leaf.
  • 7 roll up and place seam side down on a platter.
  • 8 you can make these up to a day before you are ready to serve and store them in an airtight container in the refridgerator.
