Grilled Zucchini Roll-ups

Ingredients
- Servings: 4
- 3 small zucchini, cut lengthwise into 1/4 inch thick slices
- 1 tablespoon olive oil
- 1/8 teaspoon salt
- 1 pinch ground pepper
- 1 1/2 ounces goat cheese
- 1 tablespoon minced fresh parsley (i've used dried and it is just as good)
- 1/2 teaspoon lemon juice
- 2 ounces baby spinach leaves (about 2 cups)
- 1/3 cup fresh basil leaf
Recipe
- 1 discard outermost zucchini pieces.
- 2 brush zucchini with olive oil on both sides. sprinkle with salt and pepper.
- 3 grill until tender (about 4 minutes).
- 4 in a small bowl, combine goat cheese, parsely, and lemon juice.
- 5 put 1/2 teaspoon of the cheese mixture about 1/2 inch from the end of a zucchini slice.
- 6 top with a few spinach leaves and one small (or half a large) basil leaf.
- 7 roll up and place seam side down on a platter.
- 8 you can make these up to a day before you are ready to serve and store them in an airtight container in the refridgerator.
