Easy Spanish Rice

Ingredients
- Servings: 4
- 2 tablespoons bacon grease or 2 tablespoons other cooking oil
- 1 cup long grain rice (we use jasmine )
- 1 1/2 teaspoons chili powder
- 1 teaspoon salt
- 1/4 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1 teaspoon oregano
- 1 medium onion, chopped
- 1 (8 ounce) can tomato sauce or 1 cup , chopped fresh or 1 cup canned tomato
- 2 cups chicken stock or 2 cups vegetable stock
Recipe
- 1 heat oil in a large pan that has a tight fitting cover. add rice and saute over medium heat until the grains are starting to become translucent. add onion then saute a few minutes more. when the onion is soft add the spices, stirring to mix in well, add the stock then tomatoes. when it comes to a boil put on the lid and turn heat to low. cook time is around 20 minutes.keep covered until done.
