French-fried Okra

Ingredients

  • Servings: 4
  • 1 lb okra
  • 2 eggs, beaten
  • 1/4 cup milk, plus
  • 2 tablespoons milk
  • cornmeal
  • vegetable oil (for frying)
  • salt

Recipe

  • 1 wash okra well & drain.
  • 2 cut off tips & stem ends & cut into 1/2-inch slices.
  • 3 combine eggs & milk & mix well.
  • 4 dip okra into egg-milk mixture, then dredge in corn meal & fry in hot oil (about 375f) until golden & crisp.
  • 5 drain on paper towels & sprinkle with salr.
