- 2 teaspoons fresh lime juice
- 1 teaspoon brown sugar
- 2 small cucumbers
- 1 cup grape tomatoes, halved (optional)
- 1/4 cup fresh cilantro, chopped
Recipe
- 1 peel cucumbers, halve lengthwise and slice
- 2 combine the vinegar, lime juice, brown sugar, cucumbers, and tomatoes in a bowl.
- 3 gently fold in cilantro.
- 4 refrigerate for 30 minutes for flavors to mix.
