Easy Spanish Rice

Ingredients
- Servings: 6
- 1 cup rice
- 2 cups water
- 1 tablespoon olive oil
- 1/4 teaspoon cracked pepper (or preground pepper if you don't have whole pepper)
- 1 tomato-flavored bouillon cube (found in mexican isle at grocery store, knorr brand is best)
- 1/4 cup salsa (or pic de gallo or 1/4 tomato & 1/8 onion if you don't have salsa)
Recipe
- 1 in a medium size sauce pan, place olive oil, pepper and tomato bullion.
- 2 simmer until bullion dissolves.
- 3 add rice.
- 4 add water.
- 5 add salsa (or tomatoes and onion).
- 6 sprinkle a tiny bit more pepper.
- 7 stir together.
- 8 cover and simmer for 20 minutes as you would regular rice.
- 9 fluff and serve.
