Easy Spanish Rice

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 1 cup rice
  • 2 cups water
  • 1 tablespoon olive oil
  • 1/4 teaspoon cracked pepper (or preground pepper if you don't have whole pepper)
  • 1 tomato-flavored bouillon cube (found in mexican isle at grocery store, knorr brand is best)
  • 1/4 cup salsa (or pic de gallo or 1/4 tomato & 1/8 onion if you don't have salsa)

Recipe

  • 1 in a medium size sauce pan, place olive oil, pepper and tomato bullion.
  • 2 simmer until bullion dissolves.
  • 3 add rice.
  • 4 add water.
  • 5 add salsa (or tomatoes and onion).
  • 6 sprinkle a tiny bit more pepper.
  • 7 stir together.
  • 8 cover and simmer for 20 minutes as you would regular rice.
  • 9 fluff and serve.
