Hot Potato Salad

Ingredients
- Servings: 6
- 1/2 lb bacon (save 1/3 cup drippings)
- 1/3 cup vinegar, plus
- water, to make 1/2 cup
- 1 slightly beaten egg
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 5 cups diced cooked potatoes
- 1/2 cup chopped onion
Recipe
- 1 cook bacon crisp: crumble.
- 2 combine 1/3 cup bacon drippings with vinegar/water, egg, sugar, salt, and pepper.
- 3 heat and stir till thickened.
- 4 add potatoes, onio and bacon: toss, heat through.
