Horseradish Dill Potatoes

Ingredients

  • Servings: 2
  • 4 small red potatoes (approx. 1/2 pound)
  • 1/4 cup butter (melted)
  • 1 tablespoon lemon juice
  • 1 teaspoon horseradish
  • 1/2 teaspoon salt
  • 1/2 teaspoon dill weed
  • 1/4 teaspoon pepper

Recipe

  • 1 cut a thin strip around the center of each potato.
  • 2 place potatoes in a small saucepan and cover with water.
  • 3 bring to boil.
  • 4 reduce heat; cover and cook 15-20 minutes or until tender.
  • 5 drain.
  • 6 in small bowl, combine the butter, lemon juice, horseradish, salt, dill weed and pepper.
