Egyptian Rice With Spicy Tomato Sauce

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 cup long-grain rice
  • 2 cups chicken stock
  • 1 cup water
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups tomato sauce
  • 1 -2 teaspoon harissa or 1 -2 teaspoon hot pepper paste

Recipe

  • 1 preheat the oven to 400 degrees.
  • 2 heat the oil & saute the onion but do not let it brown. add the rice to the pan & cook for 2 minutes or until the rice becomes translucent.
  • 3 place the rice, water, chicken stock, & spices in an ovenproof casserole dish. cook uncovered for 20 minutes or until all the liquid is absorbed.
  • 4 heat the tomato sauce & harissa in a pan, add salt & pepper if needed. serve the rice mixed with the spicy tomato sauce.
