Egyptian Rice With Spicy Tomato Sauce

Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 1 cup long-grain rice
- 2 cups chicken stock
- 1 cup water
- 1/2 teaspoon turmeric
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups tomato sauce
- 1 -2 teaspoon harissa or 1 -2 teaspoon hot pepper paste
Recipe
- 1 preheat the oven to 400 degrees.
- 2 heat the oil & saute the onion but do not let it brown. add the rice to the pan & cook for 2 minutes or until the rice becomes translucent.
- 3 place the rice, water, chicken stock, & spices in an ovenproof casserole dish. cook uncovered for 20 minutes or until all the liquid is absorbed.
- 4 heat the tomato sauce & harissa in a pan, add salt & pepper if needed. serve the rice mixed with the spicy tomato sauce.
