Elote (mexican Corn On The Cob)

Ingredients
- Servings: 4
- 3 tablespoons mayonnaise (fat free is fine)
- 2 teaspoons fresh lime juice (optional)
- 2 tablespoons finely grated parmesan cheese
- 1/2 teaspoon chili powder
- 1/4 teaspoon ground red pepper
- 1/4 teaspoon ground cumin
- 1/8 teaspoon salt
- 4 ears corn, shucked
Recipe
- 1 prepare grill.
- 2 combine mayo and juice (if using) in a small bowl.
- 3 combine cheese and seasonings in another small bowl.
- 4 place corn on grill rack that has been sprayed with cooking spray.
- 5 grill corn 12 minutes or until tender, turning frequently.
- 6 remove from grill and brush with mayo mixture, and sprinkle with cheese mixture.
- 7 serve immediately.
