Hellas Relish

Ingredients

  • 1 cucumber, peeled, seeded, and cut into 1/4-inch dice
  • 1 large tomato, peeled, seeded and cut into 1/4-inch dice (or 2 medium)
  • 1/2 medium red onion, cut into 1/4-inch dice
  • 1/2 cup chopped flat leaf parsley
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon coarse salt (to taste)
  • 1/2 teaspoon pepper (to taste)

Recipe

  • 1 combine cucumber, tomato, onion and parsley in a mixing bowl.
  • 2 add remaining ingredients and toss to mix.
  • 3 best if eaten within 2 hours of making.
