Garlic Skillet Red Potatoes

Ingredients

- 3 tablespoons olive oil
- 1 1/2 lbs small red potatoes, quartered
- 2 garlic cloves, minced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon fresh parsley, chopped
Recipe
- 1 in a large skillet, heat oil over medium-high heat.
- 2 stir in potatoes.
- 3 cover skillet; cook, stirring, until potatoes are almost tender, about 12-15 minutes.
- 4 uncover, reduce heat to low.
- 5 stir in garlic, salt and pepper.
- 6 cook, stirring, until potatoes are tender, about 2 minutes.
- 7 sprinkle parsley and add salt to taste if desired.
