Garlic Skillet Red Potatoes

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 3 tablespoons olive oil
  • 1 1/2 lbs small red potatoes, quartered
  • 2 garlic cloves, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon fresh parsley, chopped

Recipe

  • 1 in a large skillet, heat oil over medium-high heat.
  • 2 stir in potatoes.
  • 3 cover skillet; cook, stirring, until potatoes are almost tender, about 12-15 minutes.
  • 4 uncover, reduce heat to low.
  • 5 stir in garlic, salt and pepper.
  • 6 cook, stirring, until potatoes are tender, about 2 minutes.
  • 7 sprinkle parsley and add salt to taste if desired.
