Ekadasi Sweet Potatoes

Ingredients

- 1 lb sweet potato, cut into 1/4 inch discs
- blackstrap molasses
- honey
- multicolored salt & pepper
- oil (olive oil is the healthiest choice)
Recipe
- 1 place a layer of the sweet potatoes in a pie pan, and pour a generous amount of honey, molassas, and some salt and pepper.
- 2 keep doing this until you fill the pan to the top.
- 3 cover in foil, shiny side down and bake for 40-60 minutes turning with tongs every 10 minuts or so.
- 4 remove the foil and bake another 15-20 minutes.
- 5 serve with something savory.
