Ingredients

- 1 1/4 cups dried black-eyed peas
- 4 cups water
- 1 1/2 cups chopped onions
- 3 cloves minced garlic
- 1/2 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes
- 1 bay leaf
- 8 ounces coarsely chopped salt lamb
- tabasco sauce
- 1 cup uncooked rice
Recipe
- 1 boil the black-eyed peas for two minutes, then remove from heat and set aside for 1 hour.
- 2 add the onion, garlic, black pepper, crushed red pepper, and bay leaf.
- 3 bring to a boil, cover, and simmer 1 hour, stirring occasionally.
- 4 stir in the salt lamb and simmer 1 more hour, uncovered, stirring frequently.
- 5 meanwhile, prepare the rice as directed on the package.
- 6 remove the salt lamb and the bay leaf from the beans.
- 7 stir in tabasco sauce.
- 8 serve over rice.
