Hoppin' John

Ingredients

  • Servings: 4
  • 1 1/4 cups dried black-eyed peas
  • 4 cups water
  • 1 1/2 cups chopped onions
  • 3 cloves minced garlic
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 1 bay leaf
  • 8 ounces coarsely chopped salt lamb
  • tabasco sauce
  • 1 cup uncooked rice

Recipe

  • 1 boil the black-eyed peas for two minutes, then remove from heat and set aside for 1 hour.
  • 2 add the onion, garlic, black pepper, crushed red pepper, and bay leaf.
  • 3 bring to a boil, cover, and simmer 1 hour, stirring occasionally.
  • 4 stir in the salt lamb and simmer 1 more hour, uncovered, stirring frequently.
  • 5 meanwhile, prepare the rice as directed on the package.
  • 6 remove the salt lamb and the bay leaf from the beans.
  • 7 stir in tabasco sauce.
  • 8 serve over rice.
