Eggplant (aubergine) & Avocado Salad

Ingredients

- 1 large eggplant
- 2 -3 ripe-but-firm ripe avocados
- 2 garlic cloves, chopped finely
- 1/2 red onion, chopped finely
- 3 lemons, juice of
- 4 tablespoons extra virgin olive oil
- dulse flakes
- pepper
- 2 teaspoons honey (optional)
Recipe
- 1 pare and dice eggplant.
- 2 place in a deep bowl and immediately cover with cold water and juice of 1 lemon.
- 3 whisk together oil, garlic, dulse flakes, pepper and juice of 1 lemon.
- 4 set aside.
- 5 peel and dice avocados.
- 6 place in bowl and toss immediately with juice of 1 lemon.
- 7 drain eggplant and combine with avocados.
- 8 add chopped onion.
- 9 whisk dressing again and add to mixture.
- 10 toss gently.
- 11 set aside for about 15 minutes.
- 12 chill if desired.
- 13 before serving, toss gently again and sprinkle with honey.
