Eggplant (aubergine) & Avocado Salad

Ingredients

  • Servings: 4
  • 1 large eggplant
  • 2 -3 ripe-but-firm ripe avocados
  • 2 garlic cloves, chopped finely
  • 1/2 red onion, chopped finely
  • 3 lemons, juice of
  • 4 tablespoons extra virgin olive oil
  • dulse flakes
  • pepper
  • 2 teaspoons honey (optional)

Recipe

  • 1 pare and dice eggplant.
  • 2 place in a deep bowl and immediately cover with cold water and juice of 1 lemon.
  • 3 whisk together oil, garlic, dulse flakes, pepper and juice of 1 lemon.
  • 4 set aside.
  • 5 peel and dice avocados.
  • 6 place in bowl and toss immediately with juice of 1 lemon.
  • 7 drain eggplant and combine with avocados.
  • 8 add chopped onion.
  • 9 whisk dressing again and add to mixture.
  • 10 toss gently.
  • 11 set aside for about 15 minutes.
  • 12 chill if desired.
  • 13 before serving, toss gently again and sprinkle with honey.
