Ingredients
- 1 medium eggplant
 - 1 onion, small and chopped
 - 1 cup cheese, grated
 - 5 slices bread, torn into pieces
 - 3 tablespoons butter, melted
 - 1 (2 ounce) jar pimiento
 - 1 egg
 - 1 teaspoon salt
 - 1 teaspoon pepper (optional)
 
Recipe
- 1 peel and cut up eggplant.
 - 2 cook until done.
 - 3 add remaining ingredients.
 - 4 put in baking dish.
 - 5 bake at 350* until golden brown.
