Feta-asparagus

Total Time: 13 mins Preparation Time: 5 mins Cook Time: 8 mins

Ingredients

  • Servings: 4
  • 1 1/2 lbs fresh asparagus
  • 1 medium red onion, sliced and separated into rings
  • 2 tablespoons olive oil
  • 1/4 cup crumbled feta cheese
  • salt and pepper

Recipe

  • 1 place asparagus in 1/2 inch water in lg skillet.
  • 2 bring to a boil.
  • 3 reduce heat, cover and simmer for 5 minutes.
  • 4 in small skillet, saute onion in oil until crisp-tender.
  • 5 place asparagus on plate.
  • 6 top with onions and feta.
  • 7 season with salt and pepper to taste.
