Eggplant A La Tammy Wynette

Total Time: 50 mins Preparation Time: 30 mins Cook Time: 20 mins

Ingredients

  • Servings: 2
  • 1 medium eggplant
  • 1/4 cup flour
  • 2 tablespoons butter
  • 1 small onion, chopped
  • 14 1/2 ounces crushed tomatoes
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 tablespoons cheddar cheese, grated
  • 1 dash nutmeg

Recipe

  • 1 peel and dice the eggplant.
  • 2 dip in flour.
  • 3 in a medium size skillet, saute eggplant in the butter, when browned slightly, remove.
  • 4 in same pan, saute onions, do not allow to brown.
  • 5 place eggplant in a 1 1/2 quart casserole dish.
  • 6 add tomatoes, oregano, salt and pepper.
  • 7 mix carefully to blend ingredients.
  • 8 top with cheese and a sprinkle of nutmeg.
  • 9 bake 325 degrees f. for 20 minutes, until hot & bubbly.
