Grand Ma Dot's Baked Macaroni And Cheese

Ingredients
- 8 ounces elbow macaroni
- 2 cups cheddar cheese or 2 cups monterey jack and cheddar cheese blend
- 2 cups milk
- 1 tablespoon cornstarch
- 1 teaspoon salt
- 4 tablespoons butter
- 2 eggs
- 2 dashes tabasco sauce or 2 dashes hot sauce
Recipe
- 1 prepare macaroni according to package directions. rinse with cold water. drain.
- 2 make thin sauce: mix milk and corn starch until smooth. add salt and butter. bring to boil stirring constantly. boil one (1) minute. set aside and grate cheese.
- 3 mix cheese with sauce reserving ½ c for topping.
- 4 mix in beaten eggs and tabasco. make sure sauce is not too hot to cook the eggs.
- 5 mix in macaroni. pour into buttered (or pam sprayed) baking dish.
- 6 top with remaining cheese.
- 7 bake in 375 oven for 45 minutes.
- 8 to make a sauce using flour:.
- 9 melt butter.
- 10 mix in 4 t flour and salt using a whisk to stir until well blended.
- 11 gradually pour in milk; stirring constantly.
- 12 bring to boiling point and boil 2 minutes (stirring constantly).
- 13 reduce heat and cook (stirring constantly) 10 minutes.
