Green Chili Mashed Potatoes

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 4 russet potatoes
  • 1 teaspoon olive oil
  • 2 cloves garlic, minced
  • 1 red onion, chopped
  • 1 (4 ounce) can diced green chilies
  • 1/2 cup fat free sour cream
  • 1/4 cup fresh cilantro, chopped
  • salt and pepper

Recipe

  • 1 wash and cut potatoes into 2-inch pieces.
  • 2 place in pot and cover with cold water.
  • 3 boil for 20 minutes or till tender.
  • 4 while potatoes are cooking, saute garlicand onion in olive oil in a nonstick skillet.
  • 5 when onion is tender add green chilies.
  • 6 drain and mash potatoes.
  • 7 stir in sour cream and add onion, chilies and cilantro.
  • 8 season with salt and pepper and mix well.
