Jule's Bean Puree

Total Time: 32 mins Preparation Time: 2 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 2 (400 g) cans cannellini beans, rinsed,drained
  • 1 cup chicken stock
  • 4 cloves garlic, quartered
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil

Recipe

  • 1 combine beans and stock in med saucepan, bring to a boil, simmer, covered for 20 minutes uncover and simmer stirring occasionally about 10 mins or until the liquid is absorbed.
  • 2 blend with remaining ingredients until just smooth.
  • 3 with motor running add oil to make a smooth puree.
