Jule's Bean Puree

Ingredients
- Servings: 4
- 2 (400 g) cans cannellini beans, rinsed,drained
- 1 cup chicken stock
- 4 cloves garlic, quartered
- 1 tablespoon lemon juice
- 2 tablespoons olive oil
Recipe
- 1 combine beans and stock in med saucepan, bring to a boil, simmer, covered for 20 minutes uncover and simmer stirring occasionally about 10 mins or until the liquid is absorbed.
- 2 blend with remaining ingredients until just smooth.
- 3 with motor running add oil to make a smooth puree.
