Eggplant (aubergine) Cakes

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 eggplant
  • 1 egg, slightly beaten
  • 2 -3 tablespoons flour
  • 1 tablespoon sugar
  • salt and pepper

Recipe

  • 1 peel and dice eggplant.
  • 2 boil until tender.
  • 3 drain and mash with other ingredients.
  • 4 shape into small cakes and fry in deep fat.

  • 6 i have to tell you: when i posted this to zaar, i hadn't tried it. i just fixed it. it's very bland. the only taste that was there was the ketchup! lol i'm not sure what it needs, but either much more salt; an herb; something -- .
