Eggplant (aubergine) Cakes

Ingredients
- Servings: 4
- 1 eggplant
- 1 egg, slightly beaten
- 2 -3 tablespoons flour
- 1 tablespoon sugar
- salt and pepper
Recipe
- 1 peel and dice eggplant.
- 2 boil until tender.
- 3 drain and mash with other ingredients.
- 4 shape into small cakes and fry in deep fat.
