Fresh Cranberry Relish (substitute For Cranberry Sauce)

Total Time: 20 mins Preparation Time: 15 mins Cook Time: 5 mins

Ingredients

  • 1 (12 ounce) package fresh cranberries, rinsed
  • 1 cup red seedless grapes
  • 20 ounces crushed pineapple (with juice)
  • 1 1/2 cups sugar
  • 1 whole orange (with rind)
  • 1 (6 ounce) box cherry gelatin or 1 (6 ounce) box raspberry jell-o gelatin
  • 1 1/2 cups boiling water

Recipe

  • 1 cut the orange into 8 sections, then place in a food processor, grind to small chunks.
  • 2 add cranberries, and continue grinding to small pieces.
  • 3 add grapes and grind all to very fine bits.
  • 4 remove mixture from processor, and reserve in large bowl, stirring in sugar to blend.
  • 5 in a separate bowl, dissolve cherry gelatine in boiling water.
  • 6 add to ground cranberry mixture.
  • 7 add pineapple (including juice) and stir well to combine.
  • 8 pour into serving bowl (or jars, if giving away as gifts) and cover and store in refrigerator overnight to set (can also be frozen).
  • 9 keeps in fridge for up to two weeks.
