Garlic Smashed Potatoes

- 2 lbs potatoes
- 6 garlic cloves
- 1/2 cup nonfat milk
- 2 tablespoons butter
- 4 scallions, thinly sliced
Recipe
- 1 peel and cut potatoes into 1-inch pieces.
- 2 peel and quarter garlic cloves.
- 3 in a large saucepan, bring potatoes, garlic and salted water to a boil. cook for 20 minutes or until tender. drain.
- 4 in a saucepan over medium-high heat, bring milk and butter to a boil.
- 5 mash potatoes and garlic until smooth. stir in milk mixture and scallions.
- 6 season potatoes with salt and pepper to taste if desired.
