Garlic Smashed Potatoes

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 2 lbs potatoes
  • 6 garlic cloves
  • 1/2 cup nonfat milk
  • 2 tablespoons butter
  • 4 scallions, thinly sliced

Recipe

  • 1 peel and cut potatoes into 1-inch pieces.
  • 2 peel and quarter garlic cloves.
  • 3 in a large saucepan, bring potatoes, garlic and salted water to a boil. cook for 20 minutes or until tender. drain.
  • 4 in a saucepan over medium-high heat, bring milk and butter to a boil.
  • 5 mash potatoes and garlic until smooth. stir in milk mixture and scallions.
  • 6 season potatoes with salt and pepper to taste if desired.
