Green Cilantro Rice

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 2 garlic cloves
  • 1 medium onion
  • 2 ounces cilantro, plus extra to serve
  • 2 ounces parsley
  • 2 tablespoons olive oil
  • 14 ounces basmati rice
  • 2 1/2 cups chicken broth
  • salt and pepper

Recipe

  • 1 whizz the garlic, onion and herbs in a food processor with a splah of water until you have a thick green paste.
  • 2 heat the oil in a saucepan; when hot add the paste and fry for 5 mins, stirring.
  • 3 add the rice then stir again before adding the broth and seasoning with salt and pepper.
  • 4 top up with water to come to a fingertip's depth over the rice. simmer for 10 mins uncovered until all the liquid has gone then cover and let stand for 10 mins or so.
  • 5 fluff up with a fork then stir through the remaining cilantro to serve.
