Honey Mustard New Potatoes

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 700 g new potatoes
  • 3 small red onions, cut into wedges
  • 3 tablespoons olive oil
  • 1 tablespoon coarse grain mustard
  • 1 tablespoon clear honey
  • 1 tablespoon thyme leaves
  • 2 garlic cloves, thinly sliced

Recipe

  • 1 heat oven to 200°c
  • 2 bash the potatoes with a rolling pin to crack them slightly - this helps them absorb flavour.
  • 3 put the potatoes and onion in a baking tray.
  • 4 mix the oil, honey, mustard and thyme together and pour over the potatoes and onions. toss to coat.
  • 5 season if desired and cook for 30 minutes.
  • 6 add the sliced garlic and cook for a further 15 mins or until potatoes are tender.
