Greek Lemon Roast Potatoes

Ingredients
- Servings: 4
- 10 -12 medium potatoes
- 3 -4 lemons, juice of
- 1 -2 tablespoon lemon zest
- 2 garlic cloves, smashed
- 1/4 cup olive oil
- 1 bunch fresh oregano, finely diced
- 1 pinch salt (or to taste)
- 1 teaspoon pepper (or to taste)
Recipe
- 1 preheat the oven to 400 degrees
- 2 wash and cut the potatoes into quarters lengthwise and put into a large ovenproof baking dish.
- 3 squeeze the lemons of their juice and grate the zest from 1 or 2, pour the lemon juice over the potatoes.
- 4 drizzle with the olive oil coating all the potatoes.
- 5 add the garlic, oregano and the lemon zest, seasoning the potatoes well with the salt and pepper
- 6 bake uncovered for 45-60 minutes or until tender and nicely browned.
- 7 serve with lemon wedges.
