Greek Lemon Roast Potatoes

Ingredients

  • Servings: 4
  • 10 -12 medium potatoes
  • 3 -4 lemons, juice of
  • 1 -2 tablespoon lemon zest
  • 2 garlic cloves, smashed
  • 1/4 cup olive oil
  • 1 bunch fresh oregano, finely diced
  • 1 pinch salt (or to taste)
  • 1 teaspoon pepper (or to taste)

Recipe

  • 1 preheat the oven to 400 degrees
  • 2 wash and cut the potatoes into quarters lengthwise and put into a large ovenproof baking dish.
  • 3 squeeze the lemons of their juice and grate the zest from 1 or 2, pour the lemon juice over the potatoes.
  • 4 drizzle with the olive oil coating all the potatoes.
  • 5 add the garlic, oregano and the lemon zest, seasoning the potatoes well with the salt and pepper
  • 6 bake uncovered for 45-60 minutes or until tender and nicely browned.
  • 7 serve with lemon wedges.
