Ingredients

- 3 peeled cucumbers
- 2 1/2 cups plain yogurt
- 3 spring onions, finely chopped
- 3/4 cup raisins
- 1/2 cup walnuts
- salt and pepper
- 1 teaspoon dried mint
Recipe
- 1 halve and deseed cucumbers.
- 2 dice cucumbers and sprinkle with salt.
- 3 leave to drain 20-30 minutes.
- 4 rinse cucumbers, dry and place in a bowl.
- 5 mix in yoghurt then remaining ingredients.
- 6 cover and chill 1-2 hours.
