Cucumber Salad Persian Style

Ingredients

  • Servings: 4
  • 3 peeled cucumbers
  • 2 1/2 cups plain yogurt
  • 3 spring onions, finely chopped
  • 3/4 cup raisins
  • 1/2 cup walnuts
  • salt and pepper
  • 1 teaspoon dried mint

Recipe

  • 1 halve and deseed cucumbers.
  • 2 dice cucumbers and sprinkle with salt.
  • 3 leave to drain 20-30 minutes.
  • 4 rinse cucumbers, dry and place in a bowl.
  • 5 mix in yoghurt then remaining ingredients.
  • 6 cover and chill 1-2 hours.
