Easy Pickled Red Onions

Total Time: 2 hrs Preparation Time: 2 hrs

Ingredients

  • 2 large red onions, sliced in half then cut into about 1/4-inch slices
  • 3 teaspoons kosher salt
  • 1 1/4 cups red wine vinegar
  • 5 -6 tablespoons sugar
  • black pepper (about 1 teaspoon)

Recipe

  • 1 separate the rings and place into a large bowl.
  • 2 sprinkle with kosher salt; toss to coat with salt, then let stand for 30 minutes.
  • 3 rinse the onions under cold water and drain very well.
  • 4 place the rings between paper towels and pat dry, then place in a bowl.
  • 5 in a small bowl whisk together the vinegar, sugar and black pepper; pour over the rings in the bowl; toss to coat well.
  • 6 place in the fridge for 2 hours before serving.
