Ingredients

- 6 -9 medium potatoes, boiled and sliced
- 1 onion, sauteed
- 1/2 cup velveeta cheese, cubed
- 1/2 cup shredded cheese
- 1 (10 ounce) package frozen creamed spinach, i use just chopped
- 2 eggs
- 1 cup sour cream
Recipe
- 1 mix potatoes, onion, cheeses, and spinach in casserole dish.
- 2 poke holes in mixture.
- 3 pour egg/sour cream mixture over it and top with grated cheese.
- 4 season to taste with salt, pepper, garlic salt and nutmeg.
- 5 bake at 350-375 until top is browned.
