- 1 1/2 lbs sweet potatoes or 1 1/2 lbs yams, peeled and cut into 1 inch chunks
- 1 -2 tablespoon curry powder, to taste
- 1 teaspoon salt
- 2 tablespoons olive oil
Recipe
- 1 preheat oven to 400°.
- 2 put sweet potatoes into a shallow casserole; sprinkle with curry and salt; drizzle with olive oil.
- 3 bake, turning once or twice, for 45 minutes, until evenly browned; serve immediately.
