Dry-curry Sweet Potatoes

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 1 1/2 lbs sweet potatoes or 1 1/2 lbs yams, peeled and cut into 1 inch chunks
  • 1 -2 tablespoon curry powder, to taste
  • 1 teaspoon salt
  • 2 tablespoons olive oil

Recipe

  • 1 preheat oven to 400°.
  • 2 put sweet potatoes into a shallow casserole; sprinkle with curry and salt; drizzle with olive oil.
  • 3 bake, turning once or twice, for 45 minutes, until evenly browned; serve immediately.
