Karen's Macaroni And Cheese Casserole

Total Time: 45 mins Preparation Time: 20 mins Cook Time: 25 mins

Ingredients

  • Servings: 8
  • 1 (14 ounce) box macaroni noodles
  • 16 ounces velveeta cheese, cubed small
  • 5 -6 cups cheddar cheese, shredded
  • 3/4 cup parmesan cheese, shredded
  • 12 ounces broccoli, frozen cut
  • 1/2 cup frozen mixed vegetables
  • 1/4 cup butter
  • 1/4 cup milk
  • 1 cup seasoned croutons

Recipe

  • 1 preheat the oven to 400 degrees.
  • 2 add macaroni to 5 qts of boiling water. boil for 6 minutes.
  • 3 using a spoon, lightly crush croutons. some chunks are desired.
  • 4 add the brocoli and mixed vegetables to the macaroni and water. keep boiling for an additional 2 minutes. (do not leave the noodles in the water for more than 8 minutes total) drain.
  • 5 put the macaroni/vegtable mixture in a 13 x 9 inch backing dish.
  • 6 mix in the butter, milk and all the cheeses (reserve 1big handful of shredded cheddar cheese).
  • 7 add your desired amount of black pepper and mix well.
  • 8 sprinkle crushed croutons on top of casserole.
  • 9 bake for 20 to 25 minutes, or until cheese is melted (you should hear the bubbling from the velveeta).
