Disney's Potato Salad

Ingredients

• Servings: 8
• 1 1/2 lbs red bliss potatoes, diced
• 1 1/2 lbs sweet potatoes, diced
• 1 lb yucca root, diced
• 1 red bell pepper, diced
• 1 onion, diced
• 3 stalks celery, diced
• 2 cups mayonnaise
• 2 teaspoons ground turmeric
• 1 teaspoon mustard seeds, toasted
• 1 cup vinegar
• 2 tablespoons mustard
• salt and pepper, to taste
• 1/2 cup sugar

Recipe

• 1 steam all the potatoes for approximately 8 minutes. place in a large bowl with all the other ingredients. mix together well.
