Greek Cumin Potatoes

Total Time: 1 hr 25 mins Preparation Time: 10 mins Cook Time: 1 hr 15 mins

Ingredients

  • Servings: 4
  • 4 medium potatoes
  • 400 g tomatoes
  • 1 large onion, thinly sliced
  • 1 1/2 teaspoons cumin
  • 1 1/2 teaspoons cinnamon
  • 2 tablespoons olive oil
  • salt and pepper (to season)
  • 300 ml water

Recipe

  • 1 peel potaotes and cut in half, or if very large, quarters.
  • 2 place in roasting dish, separate onion slices and mix with potatoes.
  • 3 sprinkle the spices and seasoning over the potatoes and onion and drizzle with olive oil; mix well.
  • 4 pour tinned tomatoes over the potatoes.
  • 5 add water to the pan.
  • 6 cover and cook for 45 minutes at 200°c.
  • 7 remove foil, lower oven to 180c and cook for a further 30 minutes or so until cooked.
