Hasselback Potatoes

Total Time: 1 hr 30 mins Preparation Time: 20 mins Cook Time: 1 hr 10 mins

Ingredients

  • Servings: 6
  • 4 large potatoes
  • 1 tablespoon butter
  • 3 teaspoons olive oil
  • 1 teaspoon sugar
  • 1 dash ground black pepper
  • 1 orange

Recipe

  • 1 preheat the oven to 375 f.
  • 2 cut each peeled potatoe in half lenghtwise.
  • 3 place flat side down and cut down as if making very thin slices, but leave the bottom 1/2 inch intact.
  • 4 place potatoes in large roasting pan.
  • 5 coat potatoes with melted butter using a pastry brush.
  • 6 pour the olive oil around the potatoes and on the base.
  • 7 bake potatoes for 40-50 minutes.
  • 8 basting occasionally.
  • 9 meanwhile juice the orange and zest half of it.
  • 10 place juice, rind, and sugar in a saucepan and heat on low.
  • 11 stir until sugar is disolved.
  • 12 simmer for 3-4 minutes until thick.
  • 13 remove from heat.
  • 14 when potatoes begin to brown, brush with orange glaze and return to the oven for 15 minutes or until potatoes are deep golden brown color.
