Fruit & Quinoa Salad

Ingredients

  • Servings: 5
  • 1 1/2 cups quinoa, dry
  • 1/2 cup scallion, chopped
  • 1/3 cup dried cranberries
  • 1/3 cup raisins
  • 1/3 cup dried apricot, chopped
  • 1/3 cup pecans, chopped
  • 1 (14 ounce) can crushed pineapple, unsweetened
  • 1 tablespoon lemon juice
  • 1 tablespoon lime juice
  • 2 tablespoons fresh basil, finely chopped
  • 1 teaspoon sea salt
  • 1/2 teaspoon lemon zest
  • 1/2 teaspoon orange zest
  • 2 1/2 cups water

Recipe

  • 1 in a saucepan, combine water with quinoa and sea salt. bring to a boil. reduce heat, cover and simmer 10-15 minutes until liquid is absorbed. remove from heat, cool to near room temperature.
  • 2 in a large bowl, mix quinoa with all other ingredients. do not drain the pineapple--the juice is an essential ingredient!
  • 3 cover and chill in refrigerator overnight. serve cold.
