Fruit & Quinoa Salad

Ingredients

- 1 1/2 cups quinoa, dry
- 1/2 cup scallion, chopped
- 1/3 cup dried cranberries
- 1/3 cup raisins
- 1/3 cup dried apricot, chopped
- 1/3 cup pecans, chopped
- 1 (14 ounce) can crushed pineapple, unsweetened
- 1 tablespoon lemon juice
- 1 tablespoon lime juice
- 2 tablespoons fresh basil, finely chopped
- 1 teaspoon sea salt
- 1/2 teaspoon lemon zest
- 1/2 teaspoon orange zest
- 2 1/2 cups water
Recipe
- 1 in a saucepan, combine water with quinoa and sea salt. bring to a boil. reduce heat, cover and simmer 10-15 minutes until liquid is absorbed. remove from heat, cool to near room temperature.
- 2 in a large bowl, mix quinoa with all other ingredients. do not drain the pineapple--the juice is an essential ingredient!
- 3 cover and chill in refrigerator overnight. serve cold.
