Healthy Chicken Satay

Ingredients
- 400 g chicken breasts, skin and fat removed
- 8 bamboo skewers
- 1 garlic clove, crushed
- 1/2 onion, chopped
- 1/4 teaspoon chili powder
- 1 1/2 tablespoons crunchy peanut butter
- 1 teaspoon soy sauce
- 1 tablespoon lemon juice
- 1 teaspoon brown sugar
- 1/2 cup lite evaporated milk
- 1/4 cup chicken stock
Recipe
- 1 chicken.
- 2 soak bamboo skewers in cold water. cut chicken into cubes or strips and thread onto skewers. brush with a little oil and barbecue or grill until cooked.
- 3 satay sauce.
- 4 heat not stick saucepan; add garlic and onion and cook over medium heat for a few minutes. add remaining ingredients and simmer for 10-15 minutes or until sauce has thickened. if you like a smooth sauce, process or sieve until smooth. serve with grilled chicken skewers on rice.
