Healthy Chicken Satay

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • 400 g chicken breasts, skin and fat removed
  • 8 bamboo skewers
  • 1 garlic clove, crushed
  • 1/2 onion, chopped
  • 1/4 teaspoon chili powder
  • 1 1/2 tablespoons crunchy peanut butter
  • 1 teaspoon soy sauce
  • 1 tablespoon lemon juice
  • 1 teaspoon brown sugar
  • 1/2 cup lite evaporated milk
  • 1/4 cup chicken stock

Recipe

  • 1 chicken.
  • 2 soak bamboo skewers in cold water. cut chicken into cubes or strips and thread onto skewers. brush with a little oil and barbecue or grill until cooked.
  • 3 satay sauce.
  • 4 heat not stick saucepan; add garlic and onion and cook over medium heat for a few minutes. add remaining ingredients and simmer for 10-15 minutes or until sauce has thickened. if you like a smooth sauce, process or sieve until smooth. serve with grilled chicken skewers on rice.
