Cuban Black Beans And Rice

Total Time: 5 hrs 20 mins Preparation Time: 20 mins Cook Time: 5 hrs

Ingredients

  • Servings: 4
  • 1 (12 ounce) bag of goya dried black beans, sorted and rinsed. cover with water overnight
  • 3/4 lb yellow onion (sliced and halved)
  • 1/2 lb green bell pepper, chopped
  • 1 tablespoon garlic, chopped or 1 teaspoon garlic, prepared in jar
  • 2 bay leaves
  • 1/2 tablespoon salt
  • 1/4 cup olive oil
  • 1/8 cup apple cider vinegar
  • 2 -3 crystal brand hot peppers, minced

Recipe

  • 1 bring beans to a boil, then reduce to a simmer. cover and stir occasionally until beans are tender (at least 4 hours).
  • 2 add all above ingredients and cover with water.
  • 3 bring to a boil again, and reduce to a simmer, until all is tender and gravy thickens. you may have to add more water. you will most likely want to add more salt to taste.
  • 4 we like to serve over rice.yummah!
