Fettuccine With Sun-dried Tomato Pesto

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 3 tablespoons pesto sauce
  • 1 cup drained sun-dried tomato packed in oil, diced
  • 3/4 lb fettuccine pasta
  • salt
  • freshly grated parmesan cheese

Recipe

  • 1 combine sun-dried tomatoes and pesto and mix well.
  • 2 cook fettucine in a large pot of salted water until al dente.
  • 3 drain, reserving 1/2 cup of the cooking water.
  • 4 combine the tomato pesto with the 1/2 cup water and heat.
  • 5 add the fettucine and toss over medium heat, coating the pasta well.
  • 6 salt to taste.
  • 7 serve with the freshly grated parmesan cheese.
