Fried Potatoes

Ingredients

- 6 large potatoes
- 1/3 cup lard
- salt
Recipe
- 1 peel potatoes and cut into 1/8 inch slices.
- 2 soak in cold water until crisp.
- 3 drain off the water and dry potato slices on paper towels.
- 4 heat lard until very hot.
- 5 (i use a large skillet.) add potato slices.
- 6 reduce heat and fry slowly until crusty and brown.
- 7 turn occasionally.
- 8 remove from pan to a paper towel-lined serving dish.
- 9 sprinkle with salt and serve.
