Fruited Rice Mix

Ingredients
- 1 cup long grain rice
- 1/2 cup dried apricot, finely chopped
- 1/4 cup raisins
- 1/4 cup slivered almonds
- 2 teaspoons dried parsley
- 1 1/2 teaspoons dried orange peel
- 1/4 teaspoon onion powder
- 1/8 teaspoon clove powder (optional)
- 1/4 teaspoon cinnamon (optional)
Recipe
- 1 combine all ingredients in a bowl, stir to blend, store in an air tight jar.
- 2 to make: in a medium pot bring 2 cups water, 1/2 cup chicken stock and 2 tablespoons butter or margarine to boil. add fruited rice mix and reduce heat to simmering. cook 20-25 minutes until rice is cooked and water is absorbed.
