Grandma's Potato Puffs

Ingredients

- 1 cup leftover mashed potatoes
- 1/2 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 eggs, separated
- oil
- maple syrup
Recipe
- 1 beat egg yolks until creamy.
- 2 add mashed potatoes and mix well.
- 3 sift flour, salt and baking powder.
- 4 add flour mixture to potatoes.
- 5 beat egg whites until stiff.
- 6 fold egg whites into mixture.
- 7 drop by teaspoonfuls into hot grease or oil.
- 8 serve with syrup while hot.
