Healthy Broccoli Rabe With Pine Nuts

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 2
  • 6 cups broccoli rabe, rinsed and large stems removed (about 2 bunches)
  • 1/2 ounce pine nuts, about 2 tbsp, toasted
  • 2 garlic cloves, minced
  • 2 teaspoons olive oil
  • 1/8 teaspoon black pepper, to taste
  • 1/8 teaspoon table salt, to taste

Recipe

  • 1 in large stockpot, boil water.
  • 2 add broccoli rabe and blanch 2 minutes.
  • 3 drain.
  • 4 in large skillet, heat oil.
  • 5 add garlic and cook 1 minute.
  • 6 add broccoli rabe and cook 4 minutes.
  • 7 season with salt and pepper.
  • 8 add pine nuts.
  • 9 toss and serve.
  • 10 yields about 1/2 cup per serving.
