Healthy Curried Chickpeas & Cauliflower With Rice

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 2
  • 1/2 teaspoon curry powder
  • 1 small onion, chopped
  • 1 tablespoon olive oil
  • 1 1/2 cups cauliflower, chopped
  • 1/2 cup canned chick-peas, rinsed and drained
  • 2 tablespoons raisins
  • 1 cup cooked rice
  • 1 scallion, chopped (optional)

Recipe

  • 1 saute curry powder and onion in olive oil for 3 mintues.
  • 2 add cauliflower and cook for 8 mintues, or until tender.
  • 3 add chickpeas and raisens and cook for 3 to 4 minutes, or until warm.
  • 4 place curry mixture on top of rice and top with scallion.
