Ingredients

- 500 g sugar snap peas (1 lb)
- 1/2 cup chopped fresh mint
Recipe
- 1 wash and chop the tips off the sugar snaps.
- 2 put 2.5 cm (1 inch) water in a saucepan put in the sugar snaps and bring to the boil -- boil on the highest heat for 1 minute.
- 3 drain, add all the mint to the sugar snaps and toss well.
- 4 serve this immediately.
